Great for lunch when you’ve run out of bread! Use the strongest cheese you can find!
- Mix together 100g of any of our flours with 125g self raising flour, a pinch of salt and a teaspoon of baking powder. Rub in 40g of butter til it looks like breadcrumbs. Stire in 75g of grated cheese. Stir in 150ml or a bit more of milk to give a soft, light dough.
- Roll out, or squash the dough to about 2.5cm thick and divide into four wedges.
- Place on a greased baking tray and brush the tops with milk. Bake at 200 degrees C for about 15 minutes, till golden and well risen. Cool on a wire rack, and serve warm with lots of butter.
